Types of Tea
Tea is divided into 3 categories based on production method, that is green tea (Enzyme deactivation tea), black tea (Enzyme activation tea), and oolong tea (Enzyme semi-activation tea). They all are made by the same tea leaves (Theaceae plant) but depending on the type, processing method that is optimal for the amount of bittering agent (catechin) is chosen respectively.
After the leaves are picked, they are processed with heat through steam to prevent fermentation for green tea. The characteristic of green tea is maintaining the green color because the fermentation is stopped shortly after being picked.
※Fermentation of green tea is fermented (oxidized by the enzyme) not by inactivation of the enzyme (oxidation by bacteria).
